Maltitol, also known as hydrogenated maltose, is a functional sweetener with the molecular formula C₁₂H₂₄O₁₁. Its sweetness is 80%-90% that of sucrose.

Calorie content: Approximately 2.1 kcal/g, 47% lower than sucrose, making it suitable for low-calorie foods;
Glycemic Index (GI): About 35 (sucrose has a GI of 65). It has a moderate GI, and its impact on blood glucose is weaker than that of sucrose but stronger than that of isomaltitol/xylitol;
Tolerance: The maximum single tolerable intake is 20-30g; excessive consumption may easily cause bloating and diarrhea;
Stability: Stable below 150°C, with moderate hygroscopicity (the liquid form can be used as a humectant).

It can serve as a sweetener, flavor retainer, thickener, humectant, and quality improver, and is extensively applied in foods such as fructose, chewing gum, chocolate, jam, jelly, bread, pastries, beverages, and ice cream. It can also be used as a fat substitute to produce low-calorie foods.
